The Colombia international will feature from the off for the first time since his serious knee injury in October, as Jota drops out following a concern over a knock to the back sustained against West Ham United.
Diaz's introduction is one of three changes that Jurgen Klopp makes for the hosts, as Ibrahima Konate and Harvey Elliott come in for Joel Matip and Jordan Henderson respectively.
There is also no spot in the matchday squad for Thiago Alcantara, as Fabio Carvalho makes the bench ahead of the Spaniard, who has fallen out of favour in recent weeks.
Meanwhile, Tottenham interim head coach Ryan Mason has made two changes to the team that drew with Manchester United, as Ben Davies and Dejan Kulusevski are recalled.
Clement Lenglet and Richarlison drop out of the first XI for the visitors, who once again start Fraser Forster in goal as Hugo Lloris misses out with a hip injury.
