The Foals' first goal came controversially before the break, as Thorgan Hazard's dangerous delivery to the back post was tucked away by Herrmann, who appeared to be offside.
The goal stood, however, and the home side went into half time with a goal advantage.
Hannover posed little attacking threat as Lucien Favre's side pressured the opposition goal.
Monchengladbach should have doubled their lead with 25 minutes left on the clock as Hazard linked up with Herrmann once again, but the German was denied by Ron-Robert Zieler at point-blank range.
However, it didn't take long for the hosts to get their second as Max Kruse's pass across the face of goal was tapped in by Herrmann to double his individual tally for the evening.
The result sees the Foals leapfrog Bayer Leverkusen into third, while defeat keeps Hannover 13th in the table.
