The Scottish side took the lead with a headed finish from striker Nikica Jelavic.
Andre Villas-Boas' team drew level with a Daniel Sturridge effort, before the 21-year-old put his side ahead with a finish past Rangers keeper Allan McGregor.
The visitors extended their lead after the break with Florent Malouda heading in from close range and they could have had a fourth, but Frank Lampard was denied from the penalty spot by McGregor.
Chelsea begin the season next Sunday at Stoke City.
